Prep time: 35 minutes
Ingredients:
- 2 cups chopped cauliflower (I bought the one pre-made in the supermarket – I didn’t chop further, but I suggest it if you’d like a less crunchy crust)
- 1 serving of Kodiak Power Cakes pancake mix
- 2 large eggs
- 6 servings of fat free mozzarella
- 4 servings of pizza sauce
- As much veggies as you’d like
Preparation:
- Mix the cauliflower, power cakes mix, and 2 eggs in a large bowl until the entire mix has a sticky consistency (you can chop the cauliflower further before this step)
- Spray an oven rack with PAM to avoid the crust to stick to it
- Spread until it takes the shape of a pizza crust

- Bake at 375o for 25 minutes
- Take out of the oven

- Add the sauce, then vegetables to your liking, and top it off with the cheese
- Put in oven for another 7 minutes
