3-ingredient Beet Gnocchi

– 1 cup beets
– 1.5 cup all purpose flour (I used gluten free flour)
– 1 egg


1. Puree the beets
2. Mix all ingredients into a bowl
3. Make into a ball and cut in quarters
4. Roll each quarter with hand to 1.25cm (1/2 inch) cylinders
5. Shape one end with a fork
6. Boil in water until the gnocchi rise to the top
